veggie taco recipe

I love this recipe! It's so delicious that I forget I'm eating veggies. The spices are perfect, and I love the crunchiness.

Veggie Tacos

2T canola oil
1 large onion, diced
2 large carrots, thinly sliced
1 clove garlic, minced or pressed
2 1/2 t chili powder
1 tsp salt
3/4 tsp ground cumin
3/4 tsp oregano leaves
4 medium zucchini, chopped into 1/2 cubes
1 cup whole kernel corn (if using frozen, thaw it first)
1 can red kidney beans, drained
optional: 1 large bell pepper, chopped fine

12 tortillas
sharp cheddar cheese, grated
sour cream

Heat oil over medium heat. Add onion, carrots, garlic, and spices. Stir until onion is soft, about 10 minutes. Add zucchini, corn, kidney beans, and pepper. Stir often until zucchini is tender-crisp, about 7 minutes. Serve in warm tortillas with a dollop of sour cream and sharp cheddar cheese.
